The heatwave has brought on the most delicious of dishes to the KPEC: hand-cranked, homemade vanilla coconut milk ice-cream. We use the recipes here as a guide and modify it as we want. The coconut milk is amazing for ice-cream, and the whole vanilla beans we had ordered on ebay from a women’s vanilla bean grower’s co-op in India (Free-Trade, Organic). Which, on a different note, we had used to make vanilla extract, in a similar way to this site.
